I had Broccoli, Mushroom & Bell Peppers readily available so added these to the gravy but you could try this gravy with any veggie of your choice. Also feel free to adjust the spice level of this gravy to your suit your taste buds.
Now to the recipe...
Ingredients:
1 small broccoli head
2 cups of mushroom
1/2 green bell pepper (capsicum)
1/2 red bell pepper (capsicum)
1 tbsp of finely chopped garlic
1 tbsp of finely chopped ginger
2-3 tbsp of finely chopped spring onions
2-3 tbsp of finely chopped spring onions green
2 tbsp of soya sauce
2 tbsp of red chilli sauce
1 tbsp of hot Chilli sauce
2 tbsp of tomato ketchup
2 tbsp of vinegar
1 tbsp of cornflour
salt & pepper to taste
1-2 tbsp of oil
Method:
Cut the veggies in equal size pieces. In a pan heat few drops of oil, add mushrooms & season them with salt & pepper. Saute on medium to high flame till cooked. Remove on to a plate & keep aside. Similarly saute the Bell peppers & broccoli by seasoning them with salt & pepper. Keep these aside. Try to retain the crunchiness of Bell peppers & broccoli.
In the same pan, heat 1 tbsp of oil & once hot add ginger garlic & saute till raw garlic smell disappears Then add the spring onions & saute till translucent. Now add all the sauces like soya sauce, red chilli sauce, hot chilli sauce, ketchup & vinegar.
Cook till this mixture thickens. Now add 1-2 cups of water & simmer for 5 mins on medium to high flame. Season with salt & pepper to taste. Remember we added salt to the veggies & sauces too have some salt content in them so add salt carefully.
That's it, our Broccoli, Mushroom & Bell Peppers in Chilli Garlic Sauce is ready, Serve it hot with some steaming rice/noodles.
Happy Cooking!!
Shweta
